The “Boutique of Meat and Game – Mila” is a real “Boutique Gastronomica” located in the beautiful hills of the Cerbaie, in the heart of Tuscany. The current owners, Mila and Fernando, began processing and cooking game meat around 30 years ago. Over time they have refined the taste of their products to give customers the true flavors of non-farmed game but coming from national parks and Italian estates, transferring the flavors of Tuscan culinary culture into products.
The processing of fresh meat of wild boar, fallow deer, deer, roe deer, hare, mallard, pheasant, partridge, wood pigeon, etc. It is mainly aimed at the production of sauces, stews, patés (under glass) and salami. The animals arrive in the whole laboratory and here they are cleaned and cooked; everything is done totally by hand following the typical Tuscan recipes. After the first type of salmì cooking with the typical vegetables and aromas of Tuscan cuisine, the large pieces are boned by hand and minced; the minced meat ends up cooking very slowly for about 7 hours. The entire processing takes place in the most accurate respect of the hygiene and health regulations. The end result is a complete range of products of the highest quality.
The game sauces of Boutique Mila are very concentrated and contain no glutamate, flavoring, preservatives or dyes. The quality and taste are truly inimitable: the genuineness of the raw materials and the experience of Mila and Fernando make absolutely the difference. The venison sauces of Mila and Fernando are widely used in the quality catering sector. They are particularly suitable for seasoning pasta dishes or to prepare Tuscan croutons.
