We check the pruning of the olive trees in February, their blooms in spring, the attaching of the fruit to the flower, the natural fertilizers that are given to it, and then select the olives in the months of November and December.
Last act is the traditional cold pressing, with our stone mills.
The oil produced will never be the same as the previous year, because the cold, the sunny or rainy days, the hot summer heat will never be standardized.
